Creamy Key Lime Dressing

This is a very zesty and tangy dressing that goes perfect on any salad. I suggest putting this on a salad that has fruit mixed in with the leaf.

Ingredients

  • 1 C. sour cream
  • 1 Key lime, zest and juice
  • 1 small shallot, finely diced
  • 2 Tbs. chopped parsley
  • 1 Tbs. sugar
  • 1/4 tsp. finely chopped scotch bonnet or habanero pepper (very hot, use gloves)
  • Kosher salt
  • Freshly ground black pepper

Directions

Combine ingredients in a small bowl, and chill until ready to serve. If you prefer a thinner dressing, whisk in a bit of milk.
