  • 3 lemons
  • 3 limes
  • 1 stick of butter, softened
  • 2 C. granulated sugar
  • 4 eggs
  • ½ tsp. honey

Grate zest from lemon and limes to equal approximately 2 Tbs. Cut all lemons and limes in half. Squeeze juice into a small bowl or measuring cup equaling about 1 cup. Using a hand mixer or counter top mixer, beat butter and sugar until softened.

Reduce speed to low. Gradually add one egg and a time, mixing well after each one. Pour mixture into a microwave-safe bowl.

Microwave on high for 5 minutes, stirring once after each minute. Microwave for an additional 1-2 minutes, stirring after each 30 seconds. Cover with plastic wrap and refrigerate for at least 4-5 hours.
