  • 3 T. butter
  • 1 C. onion, chopped
  • 1/2 C. carrots, chopped
  • 1/2 C. celery, chopped
  • 3 cloves garlic, minced
  • 3 T. tomato paste
  • 3 T. all-purpose flour
  • 2 C. seafood stock
  • 1 C. white wine
  • 12 oz. lobster meat, chopped
  • 1 tsp. smoked paprika
  • 1 bay leaf
  • 1/2 tsp. thyme
  • 1/4 tsp. cayenne
  • 1/2 C. heavy cream
  • salt and pepper to taste

Melt the butter in a large pot over medium-high heat. Stir in onions, carrots, celery, garlic, and tomato paste. Sauté for five minutes. Whisk in the flour, evenly coating the vegetable mixture. Continue to sauté for another minute or so. Add stock, wine, lobster meat, paprika, bay leaf, thyme, and cayenne. Cook for 30 minutes on a medium-low heat setting, stirring occasionally. Remove bay leaf and stir in heavy cream. Season with salt and pepper if desired. Carefully use a hand mixer to puree the soup until smooth. Serve immediately.
