Creamy Macaroni Salad

This recipe will surprise you. It's creamy and slightly sweet. Pretty flecks of color from carrot and celery and parsley. This goes great with barbecues or a nice cold side salad.

Ingredients

  • Elbow macaroni
  • Sweetened condensed milk
  • Mayonnaise
  • Sweet pickle relish
  • Finely chopped carrot, celery and onion
  • Chopped parsley
  • Salt to taste
  • Other fine chopped vegetables can be added: sweet red pepper, green pepper, cucumber, zucchini etc.

Directions

Chop all vegetables. I do mine in the blender with water, then drain in a strainer, press the liquid out of the finely chopped vegetables so they aren't real wet. Set aside. Boil pasta until al dente and plunge into cold water to stop cooking process. Then drain well and place in a mixing bowl. Drizzle a small amount of oil on pasta and toss to keep from sticking together. Add condensed milk and mayonnaise and all the vegetables. Stir gently. Salt to taste. Salt will cause this to breakdown a little so add salt last. After preparing, chill overnight before serving.
