  • 4 C. cauliflower florets
  • 1 1/2 oz. cream cheese
  • salt and pepper
  • pinch nutmeg
  • 3 Tbs. sliced green onion

Boil a large pot of salted water. Add the cauliflower and cook for 8 to 10 minutes or until the cauliflower is softened. Drain the pot and cover the cauliflower and let sit off heat for 2 to 3 minutes. Add the cream cheese and the salt and pepper to the pot and mash the cauliflower. Sprinkle with a pinch of nutmeg and stir in the green onions.
