  • 2 lb. potatoes peeled
  • 1/2 C. whole milk
  • 3 Tbs. butter
  • 1/2 tsp. sea salt
  • 1/2 tsp. pepper
  • 2 Tbs. fresh chives, chopped

Put the potatoes in a large saucepan. Cover them with water and bring them to a boil. Reduce the heat and simmer for 15 minutes. Drain. In a small saucepan, combine milk and butter. Cook until the butter melts and remove the milk from heat. Put the potatoes in a bowl, and mash. Add in the milk mixture, salt and pepper. Stir until well combined. Stir in the chives.
