  • 5 lb. Yukon potatoes (cut into 3 inch chunks and peeled as well)
  • 1 lb. sliced bacon
  • 1/2 cup fat-free milk
  • 2 sticks unsalted butter
  • 1 cup heavy cream
  • 1 Tbsp. sour cream
  • 1/2 cup cheddar cheese
  • 1/2 cup minced chives

In a saucepan, cover potatoes with cold water and bring to a boil for 20-25 minutes. Drain well; return to pan and add in milk. Use a potato masher to mash the mixture. Cook for 2 minutes, stirring constantly. Remove from heat and add in cheese and remaining ingredients. Cover with chives and bacon bits (cook bacon separately beforehand).
