  • 1 lb. potatoes
  • 1 lb. mushrooms
  • ½ C. chicken stock
  • ½ tsp. fresh thyme, chopped
  • ½ tsp. fresh sage, chopped
  • 1/3 C. white wine
  • 3 garlic cloves, minced
  • 2 green onions, chopped
  • 2 T. olive oil
  • 1 can of cream of mushroom soup
  • 1 C. monetary jack cheese
  • ½ C. parmesan cheese
  • Salt
  • Pepper

Preheat the oven to 375 degrees. Lightly grease a baking pan with non-stick spray. In a saucepan, drizzle in the olive oil so you can sauté the mushrooms. Add in the chicken stock, fresh thyme, fresh sage, white wine, minced garlic cloves and chopped green onions. Let it simmer. Remove from heat. Slice up the potatoes. Place them into the greased baking pan. Pour the saucepan mixture over it. Add in the cream of mushroom soup. Sprinkle in the shredded cheeses. Salt and pepper to taste. Bake for 1 hour. Serve and enjoy.
