Creamy Mushroom Soup

Ingredients
- 1 lb. mushrooms, coarsely chopped
- 4 green onions with tops, coarsely chopped
- 1/2 C. butter
- 1/3 C. flour
- 1/4 tsp. dry mustard
- 2 tsp. salt
- cayenne pepper to taste
- 1/4 tsp. black pepper
- 2 C. chicken broth
- 2 C. whipping cream or half-and-half
- 1/3 C. sherry, optional
Directions
Saute the mushrooms and green onions in the butter in a saucepan for 5 minutes. Stir in the flour, dry mustard, salt, cayenne pepper and black pepper. Stir in chicken broth and cream gradually. Simmer until thickened and smooth, stirring constantly. Add sherry.
