Ingredients

  • Lasagna:
  • 9 lasagna noodles
  • 2 packages of frozen chopped spinach
  • 3 C. shredded mozzarella cheese
  • 1 package of ricotta
  • ¾ grated parmesan
  • 2 tsp. fresh parsley
  • Sauce:
  • ¼ C. butter
  • ¼ C. flour
  • 3 C. milk
  • 1 tsp. dried basil
  • 2 cloves garlic, minced
  • 1 lb. mushrooms, sliced
  • 1 onion, diced
  • ½ tsp. dried oregano
  • Nutmeg
  • Salt
  • Pepper

Preheat the oven to 350 degree. For the sauce, melt the butter in a saucepan. Add in the remaining sauce ingredients. While it simmers boil the lasagna noodles. In a baking pan, spread 1 C. mushroom sauce, 3 noodles, half of the ricotta cheese, half of the spinach, 1 C. mozzarella cheese and ¼ C. of Parmesan cheese. Repeat the process, until all of the ingredients are used up. Place into the oven for 35-45 minutes. Serve and enjoy.
