  • ½ onion, diced
  • 2 cloves garlic, minced
  • 1 (12 oz.) package frozen mixed veggies, thawed
  • 1 red bell pepper, thinly sliced
  • ½ C. sour cream
  • ½ C. Parmesan cheese, grated

Preheat oven to 325 degrees. In a skillet, heat oil and sauté garlic, onion, and red bell pepper until softened. Add in mixed veggies and season with salt and pepper; heat for another 5 minutes.
