  • 6 medium potatoes
  • 2 C. sour cream
  • 2 C. cheddar cheese, shredded
  • 4 Tbs. butter, melted and divided
  • 3 green onions, thinly sliced
  • 1 tsp. salt
  • 1/4 tsp. pepper

Preheat oven to 350 degrees F. Place potatoes in a large pot and cover with water. Bring to boil. Reduce heat. Cover and cook for 20 minutes or until tender. Drain and cool. Peel and grate potatoes. Place in a large bowl with remaining ingredients. Transfer to a greased 3 qt. baking dish. Drizzle with remaining butter. Bake for 30 to 35 minutes or until heated through.
