  • 5 C. potatoes, cubed
  • 1 C. water
  • 1/2 C. celery, chopped
  • 3/4 C. carrots, sliced
  • 3/4 C. onions, chopped
  • 1 1/2 tsp. parsley flakes
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbs. flour
  • 8 oz. Swiss cheese
  • 2 1/2 C. skim milk, slightly heated

In saucepan, combine potatoes, water, celery, carrots, onions, parsley, salt, and pepper. Simmer for 10 minutes, or until potato cubes are tender. In separate bowl, combine flour and milk. Add mixture into saucepan with other ingredients. Mix in cheese, heat and stir for 10 minutes until cheese has melted. Serve.
