Creamy Prosciutto Bow Ties

This is a rich spring pasta dish filled with cream and asparagus.

Ingredients

  • 1 lb. asparagus, trimmed
  • salt
  • 1 C. heavy cream
  • 1 lb. farfalle
  • 1/2 C. grated parmesan cheese
  • 2 oz. sliced Italian prosciutto, cut crosswise into thin strips

Directions

In a large skillet, bring 2 inches of water to a boil. Add asparagus and salt to taste. Cook until asparagus are just tender and bend slightly when lifted from the water. Pat asparagus dry. Cut them into bite-size pieces. Bring cream to simmer in a small saucepan. Cook 5 minutes.

Bring a large pot of water to a boil. Add 2 Tbs. salt, then the pasta. Stir well. Cook over high heat, stirring frequently, until pasta is al dente. Drain pasta and pour it with the cream and cheese into a large serving bowl. Toss. Add asparagus and prosciutto and toss. Serve.
