  • 2 tablespoons butter
  • 3 tablespoons cream
  • ¼ cup grated cheese
  • 1 cup rice
  • 1 diced onion
  • 1 ¼ cups pumpkin
  • Salt and pepper
  • Dash of cinnamon

Cut the pumpkin into cubes to begin. Melt the butter in a deep-frying pan and add the onion, frying for 3 minutes. Add the pumpkin with a dash of cinnamon and fry until golden. Season with salt and pepper, stir the pan, and reduce the heat. Cover the pan and cook for 10 minutes. Add the rice and 1 cup. Stir and cook until the water is absorbed. Add the cream and cheese and stir. Cover and let the risotto stand for 5 minutes. Serve warm.
