  • 2 T. butter
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 C. pumpkin puree
  • 1 ½ C. cream
  • Salt and pepper to taste
  • 1 ½ tsp. rosemary

In a large pot, melt butter and sauté onion and celery until tender. Add in pumpkin puree, stir well, and pour in half of your cream. Season with salt, pepper, and rosemary. Heat mixture over low until just starting to bubble, remove from heat, and use an immersion blender to blend until creamy. Season with any additional salt and pepper you want, ladle into bowls, and serve with a swirl of remaining cream.
