Everyone has a recipe for a classic potato salad, but give this one a try at your next barbeque! It skips the mustard and red pepper in favor of creamy ranch and shredded cheese. Yum!

  • 1 lb. potatoes
  • 1 C. sour cream
  • 1/2 package ranch dressing mix
  • 1 C. shredded cheddar cheese
  • 1 red onion

Peel and chop your potatoes into small, bit-sized chunks. Chop the red onion and set aside. In a large pot bring water to a boil. Add the cut potatoes and boil for 15minutes. Drain and rinse. Mix together the sour cream and ranch mix. Add the potatoes, cheese, and onions to a large bowl and mix in ranch dip until evenly coated. Chill and serve.
