Ingredients

  • Creamy Roasted Red Pepper Sauce:
  • 2 roasted red peppers
  • 1 T. extra virgin olive oil
  • 2 oz. of soft goat cheese
  • 1 tsp. salt
  • For the Zucchini Noodles:
  • 1/4 C. extra virgin olive oil
  • 1/2 C. minced onion
  • 2 cloves garlic
  • 1 tsp. salt
  • 2 lbs. zucchini

Directions

For the zucchini noodles, heat a large skillet over low heat. When the skillet is heated, add the olive oil, garlic, and sauté onions. Add the salt and zucchini noodles to the skillet. As soon as the zucchini noodles begin to soften, add the creamy roasted sauce. Serve with or without pasta, your choice!
