This easy seafood casserole is super creamy and savory. The mixture of the crab meat and shrimp is perfect and tender. Combined with the potatoes, there is nothing missing from this amazingly flavorful dish.

  • ¾ lb. crab meat
  • ¼ lb. shrimp, medium
  • 1 C. pepper jack cheese, shredded
  • 1 ½ C. mayonnaise
  • 5 eggs, hard boiled and diced
  • 3 Tbs. fresh parsley, chopped
  • ¾ C. onion, chopped
  • 8 oz. evaporated milk
  • 1 lb. red potatoes, diced
  • Salt and pepper to taste
  • 2 tsp. garlic powder

Combine all of the ingredients except the potatoes and pour them in a casserole dish. Bake the casserole in a 350 degree oven for 30 minutes. While the casserole is baking, boil the potatoes with salt, pepper, garlic powder, and oil until they’re fork tender. Drain them and serve the casserole on top of them.
