  • Filling:
  • 9 lasagna noodles
  • 1 package of ricotta
  • 2 packages of spinach, chopped
  • 3 C. shredded mozzarella
  • ¾ C. Parmesan cheese, grated
  • 2 T. parsley, chopped
  • Sauce:
  • ¼ C. butter
  • 2 garlic cloves, minced
  • 1 lb. mushrooms, sliced
  • 1 onion, diced
  • ¼ C. flour
  • 3 C. milk
  • 1 tsp. dried basil
  • ½ tsp. dried oregano
  • Nutmeg
  • Salt
  • Pepper

Preheat the oven to 350 degrees. For the sauce add all of the ingredients into a saucepan and let it simmer. In a large pot, add the lasagna noodles and let them boil. Prepare a baking pan by greasing it. Drain the lasagna noodles. Layer the baking pan with the noodles, sauce, ricotta cheese, spinach, mozzarella cheese, and Parmesan cheese. Repeat the process until all of the ingredients are used up. Place it into the oven for 45 minutes. Let it cool for 15 minutes and serve.
