  • 1 (8 oz.) package pasta, cooked and drained
  • 2 T. butter
  • ½ C. onion, diced
  • 2 cloves garlic, minced
  • 1 C. fresh spinach, chopped
  • 2 T. flour
  • ¾ C. milk
  • ½ C. mozzarella cheese, shredded
  • ½ C. ricotta cheese
  • ½ C. Parmesan cheese, shredded
  • 1 tsp. sugar
  • Salt and pepper to taste

Preheat oven to 350 degrees. In a large saucepan, melt butter and sauté onion and garlic until fragrant and translucent. Add spinach, cover, and steam for 5 minutes until wilted. Sprinkle in flour, stir and cook for about a minute, and then gradually stir in milk. Cook for a few minutes, stirring frequently, and mixture thickens. Remove from heat and add mozzarella, ricotta, sugar, salt, and pepper. Toss with pasta, sprinkle with Parmesan cheese, and bake for 20 minutes.
