  • 4 C. tomato, peeled and chopped
  • 2 C. vegetable juice V8
  • 2 C. chicken stock
  • 5 Tbs. fresh basil leaves, cleaned
  • 1 C. heavy whipping cream
  • 1/4 C. unsalted butter
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbs. parmesan cheese, grated

Simmer tomatoes, vegetable/tomato juice and stock in saucepan for 30 minutes. Remove from heat and puree with the basil leaves using one of those handy dandy immersion blenders right in the cooking pan. Return to low heat and stir while adding cream and butter. Sprinkle each serving with grated parmesan and basil leaves and serve with garlic bread.

  • I very much enjoy the recipes on this site, but much too often the serving size is omitted. Such is the case with Creamy Tomato Basil Soup. Is there some way to make this inclusion a necessity before it is put online?
