Here is an incredibly simple recipe for creamy tomato basil soup that tastes like it came from a five-star restaurant. While it is not considered healthy by any means, it is the most delicious, mouthwateringly creamy soup that I’ve ever had.

  • 4 Tomatoes, peeled, seeded and diced
  • 1 24oz jar pasta sauce
  • 14 fresh Basil Leaves
  • 1 C Heavy Whipping Cream
  • ½ C Butter
  • Kosher Salt and Freshly Ground Black Pepper

Combine the tomatoes and pasta in a stockpot over medium heat. Let simmer for 30 minutes. Use your blender or food processor to puree the tomato mixture with the basil leaves after the pot has simmered for 30 minutes. Return the mixture to the pot and continue cooking over medium heat. Be careful to not boil the pot during the cooking process.

Finally, stir in the heavy cream and butter. Taste for salt and pepper and continue heating the pot for about five minutes, until the butter has melted and the cream is well combined. Serve warm with a side of your choice.
