  • 2 C. tomatoes, chopped
  • 3 cloves garlic, minced
  • ¼ C. olive oil
  • 1 C. basil leaves
  • ¼ C. pine nuts
  • Salt and pepper to taste
  • 1 C. Parmesan cheese, shredded
  • 2 C. fettuccine pasta, cooked and drained

In a skillet, heat a tablespoon of oil and sauté garlic and tomatoes until tender. Remove from heat and let cool slightly. Transfer to a blender, add in oil, basil, pine nuts, salt, pepper, and Parmesan, and blend smooth. Toss with pasta and serve.
