Creamy Tomato Sauce

Ingredients
- 1/4 C. butter
- 1/4 C. chopped fresh shallots
- 3 lbs. fresh tomatoes, peeled, seeded and chopped
- salt
- pepper
- 1/2 C. heavy cream
Directions
In a large saucepan, melt butter over medium heat. Add shallots and cook for 3 minutes. Add the tomatoes and salt and pepper and cook, stirring, until sauce simmers. Cook until the sauce thickens, about 20 minutes. Let cool. Pass the tomato mixture through a food mill. Return the sauce to the pot and let heat over medium heat. Add cream and cook for 1 minute. Serve hot.
