Ingredients

  • 1 cup chicken broth
  • ¾ cup heavy cream
  • 1 chopped onion
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 2 cans diced tomatoes with juice
  • Salt and pepper

Directions

In a skillet over medium-high heat, melt the butter and add the onion. Cook and stir the onion often for 5 minutes. Add the flour and stir for 1 minute. Add the flour and onion to the slow cooker. Pour the tomatoes and juice into the slow cooker. Add the broth and ½ cup water and stir everything together. Cook for 6 hours on low. Use an immersion blender to puree the soup. Pour in the cream and stir. Season with salt and pepper and stir.
