  • 4 lb. russet potatoes, peeled and sliced
  • 2 ½ C. heavy cream
  • 2 shallots, diced
  • Salt and pepper to taste
  • 1 tsp. dried rosemary
  • 2 C. white cheddar cheese, shredded

Preheat oven to 375 degrees. In a large bowl, whisk together heavy cream, shallots, salt, pepper, and rosemary. In a greased baking dish, layer potatoes and white cheddar. Pour mixture evenly over layers, cover with foil, and bake for an hour. Uncover and bake for an additional 30 minutes until tender.
