  • Truffles:
  • 5 oz. white chocolate, chopped
  • ½ of a ginger knob, grated
  • ½ C. liquid cream
  • ½ C. shredded coconut
  • Lime zest
  • Topping:
  • Shredded coconut

In a bowl, add in the grated ginger knob, liquid cream and lime zest. Place it into the microwave for 30 seconds. Add in the chopped white chocolate. Place in the microwave for 1 minute and mix well. Refrigerate for 1 hour. Scoop out balls from the refrigerated mixture. Place on a cookie sheet lined with wax paper. Let them sit. Dip the truffles into the shredded coconut. Serve and enjoy.
