This Creole chicken casserole is great for dinnertime!

  • 10 oz. fresh chopped spinach
  • salt and pepper, to taste
  • 1/4 C. chicken broth
  • 4 boneless chicken breast halves, boneless, pounded to even thickness
  • Creole seasoning blend
  • 1 large tomato, diced
  • 4 green onions, sliced

Heat oven to 350° and lightly grease a 9x13-inch baking dish. Place spinach in baking dish, sprinkle with salt and pepper, then add chicken broth. Sprinkle chicken with Creole seasoning, then more salt and pepper. Arrange over the spinach. Sprinkle with tomato and green onion. Cover the baking dish with foil and bake for approximately 25 minutes. Uncover and bake for another 10 to 15 minutes or until chicken is cooked through.
