Creole Fish
Ingredients
- 2 Tbs. butter, melted
- 1/4 C. onion, finely chopped
- 2 Tbs. flour
- 1/2 C. milk
- 1/2 C. celery, finely chopped
- 1/4 C. green pepper, finely chopped
- 1 can tomato soup
- 1/2 tsp. salt
- 1/2 tsp. chili powder
- 1 lb. fish fillets (talapia works well)
- 4 C. white rice, cooked
Directions
In pan, saute onion in melted butter until tender. Add flour then milk and blend well. Add remaining ingredients except the fish and rice and stir well. Add fish fillets and cover. Cook over medium heat 10-15 minutes or until fillets are tender and flaky. Serve over rice.
