  • 3-4 C. shrimp, peeled and deveined
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 T. butter
  • 2 (12 oz.) cans evaporated milk
  • 2 (10 oz.) cans cream of potato soup
  • 2 (10 oz.) cans cream of chicken soup
  • 1 (8 oz.) can corn, drained
  • 1 tsp. paprika
  • Salt and pepper to taste
  • 1 tsp. cayenne pepper
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 4 oz. cream cheese, softened

In a skillet, melt butter and sauté onion and garlic until fragrant and softened. Transfer to your crockpot and pour in evaporated milk, potato soup, and chicken soup. Add corn and season with salt, pepper, cayenne, oregano, and thyme. Stir well and cook on low for 2 to 3 hours. Add in shrimp and cream cheese; cook for an additional 30 to 45 minutes until shrimp is cooked through and cheese has melted.
