  • 4 large potatoes
  • 4 T. butter, melted (olive oil and other fats can be used)
  • salt and pepper to taste
1/4 C. grated Parmesan cheese

Preheat your oven to 425°F. Cut slits into each potato, leaving the bottom intact. Space the slices 1/4-inch apart. Transfer to a baking dish. Brush the potatoes with half of the butter and generously season with salt and pepper. Bake for 30 minutes and brush with remaining butter. Bake for 20 minutes. Sprinkle with cheese and cook for another 10 minutes. Serve immediately.
