  • 1 lb. of leftover chicken breast, pounded
  • 2 cups of all-purpose flour
  • 1 tablespoon of Italian seasoning
  • 1 egg
  • ½ cup of milk
  • 2 cups of plain bread crumbs
  • 1 jar of leftover red pasta sauce
  • ½ cup of leftover shredded mozzarella
  • ½ of leftover parmesan cheese
  • 1 box of linguine pasta
  • Chopped parsley, for garnish

Directions

Preheat the oven at 350F.
First, wash the chicken breast with water and lime. Dry it off with paper towels. Using ceramic wrap, tenderize the chicken with a meat tenderizer hammer. Season the chicken with salt, pepper, and Italian seasoning.
Take out 3 medium-sized bowls to dredge the chicken. In the first bowl, place 2 cups of all-purpose flour. In the second bowl, beat 1 egg and mix it with ½ cup of milk. In the last bowl, place 2 cups of plain bread crumbs.
To start the breading, dredge the chicken in flour first. Then, dredge the chicken in egg and milk mixture and lastly, dredge the chicken in plain bread crumbs.
In medium-sized skillet, cook the chicken on both sides on medium high. Note, do not fully cook the chicken .When the chicken develops that crispy crust, add a good amount of red pasta sauce on top of the chicken. Then, place shredded mozzarella cheese and parmesan cheese on top of it. Using the same skillet, bake the chicken for 12-15 minutes.
While the chicken is baking, take out a large pot and pour 4-6 quarts of water to boil the linguine pasta. When the water is boiling, season the water with salt and add the pasta. Cook the pasta for 8-10 minutes or until it is al-dente.
In a small pot, take out the remaining pasta sauce and let it heat for 5-8 minutes. You can also heat it up in the microwave for 2-3 minutes.
On a serving plate, pour the pasta sauce and spread it out evenly. Then, place the linguine pasta on top of the sauce. Lastly, place the crispy parmesan chicken on top of the pasta. Garnish it with chopped parsley.
