  • 1 T. vegetable oil
  • 1 lb. lean ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp. chili powder
  • 1 ½ tsp. paprika
  • 1 tsp. cumin
  • 1 tsp. unsweetened cocoa powder
  • 1 tsp. oregano
  • 1 (14 oz.) can kidney beans
  • 1 lb. tortilla chips
  • 2 C. mozzarella cheese, shredded

In a large skillet, heat oil and sauté onion and garlic while browning ground beef until cooked through. Season with chili powder, paprika, cumin, cocoa powder, and oregano. Add in kidney beans and toss until warm. Pour chips into a greased baking dish and layer with beef mixture and cheese. Broil for 4 to 5 minutes to melt cheese and crisp chips.
