You don’t need to go to the beach to get juicy coconut shrimp! You can whip some up at home and bring the beach to you - at least the flavors. These shrimp are tasty, tender, and a touch sweet.

Ingredients

  • 1 ½ lb. shrimp, jumbo (cleaned)
  • 2 C. toasted coconut shreds
  • ¾ C. all-purpose flour
  • 3 egg whites
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ tsp. ground ginger
  • Vegetable oil for frying

Directions

Heat the oil in a deep skillet. Combine the coconut, flour, salt, pepper, and ginger. Beat the egg whites with a splash of water (don’t get them fluffy, just to dip). Coat the shrimp in the egg whites and then the coconut mixture. Fry the shrimp for 5-10 minutes, rotating until they’re golden and crispy.
