  • 1/3 C all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 eggs, beaten
  • 3/4 C bread crumbs
  • 1 C shredded coconut
  • 1 lb. shrimp, peeled, deveined, tails attached
  • Olive oil, for cooking
  • Dipping sauce, as desired
  • 1 lemon, cut into wedges

Combine flour, salt and pepper in bowl. Beat the eggs in a second bowl. Combine break crumbs and coconut in the third.

Dip the shrimp into the flour, then the eggs and then cover with coconut mixing.

Heat up olive oil in a skillet. Fry each side for 2 to 3 minutes, or until golden brown.

Serve coconut shrimp with dipping sauce and lemon wedges.
