Crispy Crunchy Zucchini Sticks

- 1 lb. zucchini, sliced into sticks
- 2 eggs
- 1/2 C. grated mozzarella or provolone
- 1 Tbs. olive oil
- 1 1/2 C. panko bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. chili powder
- 1/2 tsp. garlic powder
Preheat the oven to 450º. Place the zucchini sticks in a shallow plate and dredge them well in egg whites. Get a zip-top bag and combine the panko crumbs, the cheese, salt, garlic, and pepper.
Place two zucchini sticks at a time in the bag and shake it well to coat the zucchinis nicely. Coat a baking sheet with little cooking spray and place the sticks on a layer over the sheet. Sprinkle the sticks evenly with olive oil. Bake for 3-4 minutes for each side until the sticks are crispy and tender.
