The following recipe will prepare four servings of some delicious crunchy and crispy Zucchini sticks. The coating will be of provolone or mozzarella cheese and panko crumbs. You can serve the sticks either with marinara sauce or some low-calorie ranch dressing, and it'll be a hit!

  • 1 lb. zucchini, sliced into sticks
  • 2 eggs
  • 1/2 C. grated mozzarella or provolone
  • 1 Tbs. olive oil
  • 1 1/2 C. panko bread crumbs
  • 1/2 tsp. salt
  • 1/4 tsp. chili powder
  • 1/2 tsp. garlic powder

Preheat the oven to 450º. Place the zucchini sticks in a shallow plate and dredge them well in egg whites. Get a zip-top bag and combine the panko crumbs, the cheese, salt, garlic, and pepper.

Place two zucchini sticks at a time in the bag and shake it well to coat the zucchinis nicely. Coat a baking sheet with little cooking spray and place the sticks on a layer over the sheet. Sprinkle the sticks evenly with olive oil. Bake for 3-4 minutes for each side until the sticks are crispy and tender.
