  • 1 chicken, cut into 8 pieces
  • 1½ teaspoons salt
  • 1½ cups flour
  • 1 teaspoon pepper
  • ½ teaspoon cayenne pepper
  • 1 cup buttermilk
  • vegetable oil

Combine the salt, pepper, flour and cayenne in a large bowl and mix. Cover the chicken in the mix and shake off excess. Set the chicken aside for 15 minutes. In a separate bowl, pour in the buttermilk and dip the chicken in the buttermilk, then again dipping it into the flour mix. In a heavy-bottom Dutch oven, heat 5 inches of oil to 360°F. Using tongs, place the chicken into the oil and fry for about 10 minutes on each side, or until golden brown. Drain the chicken by placing it on paper towels or a wire rack.
