  • 1 lb. green beans
  • Vegetable oil for frying
  • 1 C. flour, divided
  • 1/2 C. yellow corn meal
  • 1 Tbs. salt
  • 1 tsp. black pepper
  • 1 C. milk
  • 2 C. marinara sauce

Boil a large pot of water. Add green beans and cook for 2 minutes. Remove and transfer to an ice bath. Pat dry and set aside.

Heat vegetable oil in a medium sized skillet over medium-high heat. In a small bowl, add corn meal, 1/2 C. flour, salt and pepper. Stir. In a separate bowl, pour 1/2 C. flour in. Place milk in a third separate bowl.

Dip pickles into milk, flour, milk, then cornmeal. Repeat for all beans. Using tongs, add pickles onto oil and cook until browned, flipping once for 5 minutes per side. Remove and place on a bed of paper towels. Allow to cool for a few minutes. Serve with a side of marinara sauce.
