  • 4 large green tomatoes, cut in 1/2-inch thick slices
  • 2 cage-free eggs
  • 1/2 C. whole milk
  • 1 C. flour
  • 1/2 C. cornmeal
  • 1/2 C. bread crumbs
  • 2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1 qt. Vegetable oil

In a medium bowl, combine eggs and milk. Place flour in a shallow dish. Combine cornmeal, breadcrumbs, salt and ground pepper in a separate shallow dish.

In order, coat tomatoes in flour, egg mixture and then breadcrumbs. Fill a large skillet with 1/2-inch of vegetable oil. In small batches cook tomatoes for 3 minutes on each side or until well browned. Drain on paper towel and serve warm.
