  • 2 lb. russet potatoes
  • 1 medium onion, peeled
  • 2 large eggs
  • 2 tsp. salt
  • 2 tsp. baking powder
  • 1/4 C. flour
  • 1 C. oil

Preheat the oven to 425 degrees. Peel the potatoes and grate them with the onion, either by hand or with a food processor. Put the potato mixture into a sieve and press down with a paper towel to remove any excess moisture. Repeat until the liquid is mostly drained. Transfer the potato mixture to a bowl and add the eggs, salt, baking powder, and flour. Sir well to mix.

Fill two heavy, rimmed baking sheets with 1/2 C. oil each. Put the pans in the preheated oven for 10 minutes to heat the oil. Carefully remove the pans from the oven and drop 1/4 C. batter into the oil, about 1 1/2 in. apart. Using a spoon or spatula, flatten the pancakes slightly. Bake for 15 to 20 minutes, or until the bottoms are golden brown. Flip and cook for another 10 minutes. Drain the latkes to paper towels to drain.
