  • 3 C. olive oil
  • 1 medium zucchini, cut into 3-inch long by ½-inch wide strips
  • 1 large egg
  • ¾ C. panko breadcrumbs
  • ¼ C. parmesan cheese, grated
  • 2 C. fresh arugula
  • 1 large tomato, diced
  • ¼ C. mozzarella, cubed
  • Dressing of your choice

Heat olive oil in a large pot or frying pan over medium heat until it reaches 350 degrees. In a small bowl, whisk the egg. In a medium mixing bowl, mix bread crumbs and parmesan cheese. Dunk the zucchini strips in egg and cover in breadcrumb mixture. Place on a baking sheet or plate. Fry zucchini for 2-3 minutes or until golden brown. Drain.

Place arugula on each plate. Dress with fried zucchini, tomatoes and mozzarella. Serve with dressing of your choice.
