  • 2 C. of shredded zucchini
  • 2 eggs
  • ½ C. of shredded Parmesan cheese
  • ½ C. of shredded cheddar cheese
  • 1 clove of garlic, minced
  • 2 T. minced green onion
  • 2 T. minced white onion
  • ½ C. of flour
  • oil for frying
  • bread crumbs
  • fresh dill sprigs

In a large mixing bowl, combine zucchini eggs, Parmesan cheese, cheddar cheese, garlic, and onions.
Oil a stove top griddle for frying.
Add flour into the zucchini mixture. Mix well then form zucchini mixture into ¼-inch patties.
Warm griddle to medium heat.
Dip the patties in breadcrumbs and sprinkle the crumbs on top when you have them on the griddle to add extra crunch.
Cook 5 to 7 minutes or until golden brown. Flip patties and repeat cooking process on opposite side.
Serve warm with fresh sprigs of dill for garnish.
