Crispy Italian Style Calzone with Gooey Cheese Filling

- 2 refrigerated pizza crusts, rolled out to 1/4 inch thickness
- 2 C. shredded mozzarella cheese
- 2 C. pasta sauce, plus more for dipping
- 2 lg. tomatoes, sliced
- fresh herbs, for garnish
- 1/4 C. melted butter
- 1/4 C. vegetable oil
Preheat the oven to 450 degrees and place a cookie sheet into the oven while it preheats.
Cut the dough into four 8 to 10 inch circles (you may have to re-roll the dough to use it all up). Spoon 1/4 of the cheese, 1/4 of the sauce, and 1/4 of the tomatoes. Fold calzone over the toppings and crimp using the edges of a fork. Brush the calzones (top and bottom) liberally with melted butter and vegetable oil mixture and pour any remaining mixture over the top of each.
Carefully pull hot cookie sheet out of the oven and placed prepared calzones on there. Bake for approximately 5 minutes, or until the tops and bottoms crisp. After the outside is crispy, immediately lower the oven temperature to 250 degrees and cook for another 25-30 minutes, or until the cheese inside has melted.
