  • refrigerated pizza dough
  • 1/2 C. Parmesan cheese, grated
  • 1/2 C. mozzarella cheese, shredded
  • 1/8 lb. prosciutto, sliced thin
  • fresh spinach leaves
  • 1/2 tsp. oil
  • 1/4 tsp. Italian seasoning
  • 4 eggs
  • pepper

Preheat the oven to 425 degrees and lightly grease the pizza pan. Press out the dough into an even layer on the tray. Top with the oil, Italian seasoning, and the spinach. Top with the prosciutto and sprinkle with 1/4 C. Parmesan cheese and 1/4 C. mozzarella cheese. Carefully crack the eggs onto the top of the pizza and top with the remaining cheese. Bake for 10 to 13 minutes, or until the eggs are set. Season with pepper and serve.
