Tilapia is a pretty easy fish to master, so why limit yourself to simple flavors? This Parmesan encrusted Tilapia is crispy on the outside from the baked Parmesan (which also gives this dish amazing flavor) and perfectly juicy inside. It’s the perfect summer meal!

  • 16 oz. tilapia (or 4 filets)
  • 2 Tbs. mayonnaise
  • ¾ C. Parmesan, freshly shredded
  • 2 tsp. Paprika
  • 1 Tbs. fresh parsley, chopped
  • 1 Tbs. olive oil
  • Salt to taste

Rinse and pat dry the tilapia with a paper towel - try to get the skin as dry as possible. In a bowl, combine the Parmesan, paprika, parsley, and salt. Spread a layer of mayo on both sides of the tilapia. Roll the fish in the seasoning mixture and line them on a prepared baking sheet. Cook the fish for 12 minutes in a 400 degree oven.
