Crispy Parmesan Encrusted Tilapia

Ingredients
- 16 oz. tilapia (or 4 filets)
- 2 Tbs. mayonnaise
- ¾ C. Parmesan, freshly shredded
- 2 tsp. Paprika
- 1 Tbs. fresh parsley, chopped
- 1 Tbs. olive oil
- Salt to taste

Rinse and pat dry the tilapia with a paper towel - try to get the skin as dry as possible. In a bowl, combine the Parmesan, paprika, parsley, and salt. Spread a layer of mayo on both sides of the tilapia. Roll the fish in the seasoning mixture and line them on a prepared baking sheet. Cook the fish for 12 minutes in a 400 degree oven.
