Veggies don’t usually make it to movie night - unless they’re crispy and tasty! These yummy zucchini fries are the perfect snack to chow down on while you’re watching you favorite movie. The best part is they’re guilt-free!

  • 2 zucchini, sliced
  • 1 egg, large (beaten + a splash of water)
  • 2 Tbs. olive oil
  • ⅛ C. flour
  • ¾ C. panko bread crumbs
  • ½ tsp. garlic powder
  • Salt and pepper to taste

Preheat the oven to 425 degrees. Combine the flour, panko, garlic powder, salt, and pepper. Pat the zucchini slices dry, dip them in the egg and roll them in the flour mixture. Line the fries on a baking sheet and drizzle them with the olive oil. Bake the zucchini for 10-15 minutes until they’re golden and crunchy.
