Crispy Peanut-Coconut Chicken

This Caribbean-inspired dish has fabulous island flair and is also a special dish to make for Kwanzaa.

Ingredients

  • 1/2 C. sweetend, flaked coconut, lightly toasted
  • 1 C. salted peanuts
  • 1/4 tsp. pepper
  • 1 egg
  • 2 tsp. grated fresh ginger
  • 1 1/2 lb. boneless, skinless chicken breast halves, cut into 1-inch strips

Directions

Heat oven to 400 degrees. Spray a baking sheet with cooking spray. Very finely chop coconut and peanuts (or process in a food processor until nuts are finely chopped). Stir in pepper and transfer to plate. In a bowl, mix egg and ginger. Dip chicken pieces in egg mixture, then press into peanut mixture. Arrange on baking sheet. Spray with cooking spray. Bake 20 minutes, until chicken is browned and cooked through.
