Crispy Pork Schnitzel

- 2 eggs, beaten and combined with 2 T water
- ¼ C canola oil, for frying
- 2 C panko bread crumbs
- 1 C flour
- 4 four oz pork chops, lightly pounded
Fill three separate bowls with flour, egg, and breadcrumbs. Season the pork with salt and pepper. First, dip the chicken in the flour, then the egg, and lastly in the breadcrumbs.
Heat ½ inch of oil in a skillet over medium high heat. Add the cutlets to the pan and cook schnitzel for about three minutes on each side until it’s golden brown and crispy. Once schnitzel is done cooking, remove from pan and blot off excess oil with a paper towel. Serve schnitzel hot with spaezle or mashed potatoes.
