  • 1 lb. potatoes, boiled, peeled and quartered
  • ¼ C. milk
  • 1 Tbs. butter
  • 1 Tbs. olive oil
  • 1 yellow onion, diced
  • 1 C. fresh spinach
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 C. parmesan cheese, shredded
  • 1 Tbs. lemon
  • 1 egg, beaten
  • 2 C. panko crumbs
  • Olive oil for frying
  • 1 tsp. cayenne pepper
  • 1 C. sour cream

Mash potatoes and milk together in a large mixing bowl. Set aside. In a large skillet, heat 1 Tbs. butter and 1 Tbs. olive oil over medium heat. Add onions to skillet and cook for 3 minutes until soft and clear. Add spinach and garlic. Season with salt and pepper. Cook for 2-3 minutes or until spinach is wilted. Remove from heat and add to potatoes. Gently fold in cheese and lemon juice until well combined.

Add egg and breadcrumbs to potatoes and stir. Shape into small patties about the size of your palm. In a large skillet, heat about ¼ C. of olive oil. In batches, fry patties on both sides for about 3-4 minutes. Add more oil to the skillet if needed. Remove patties from skillet onto a bed of paper towels and pat dry. Transfer to a serving plate and dust with cayenne pepper. Serve with sour cream.
